In time for a spring getaway, the latest Amex Offers are from Hilton Garden Inn and KLM Royal Dutch Airlines. Through April 11 and April 8 respectively, you can get $40 back after spending $200 at Hilton Garden Inns in the US and $200 back after spending at least $1000 on KLM Royal Dutch Airlines when you register your eligible American Express card. (Note that there is already an ongoing Amex Offer available for Hilton Hotels, also valid through April 11, 2016, offering $60 back after spending $300, that excludes Hilton Garden Inns.)
